This is my husbands aunts recipe & it quickly became the only caeser salad recipe we make in our house. Everytime we take this salad to any type of gathering, it’s nothing but compliments, & everyone wants the recipe!
Serves 6
1 1/2 cups mayonnaise
2 TBS fresh lemon juice
2 ts dijon mustard
3 whole anchovies, finely chopped
4 garlic cloves, crushed
1/4 ts worcestershire sauce
1/2 ts freshly ground black pepper
2 large heads cos lettuce, washed
1/4 cup parmesan cheese
For the croutons:
3 slices of your favourite bread
3 TBS good quality olive oil
salt & freshly cracked black pepper to taste
Method:
To make the dressing:
In a large bowl, whisk together the mayonnaise, lemon juice, mustard, anchovies, garlic, worcestershire sauce & pepper. Ensure everything is mixed well, then cover & place in the fridge until needed.
To make the croutons:
Preheat oven to 180 degrees C
Tear bread into bite-sized chunks & place on a baking sheet lined with baking paper.
pour olive oil, salt & pepper evenly over bread & toss to ensure every piece of bread is coated.
Cook in oven for 15-20 minutes or until bread becones crispy & golden in colour. Flip croutons over halfway through cooking. Allow to cool.
To assemble the salad:
Roughly chop the lettuce & place in a big salad bowl.
Pour dressing on top, & mix to ensure lettuce is coated evenily.
Using a vegetable peeler, peel long thin peices of cheese & add to the salad.
Add the croutons just before serving.
