
This is my favourite breakfast in the summer. My kids just adore this one too, they love adding all the different toppings. I just love the combination of the berries & peaches. & there’s something about acai – it just makes me feel like I’m starting my day out on a good note. This is such an easy breakfast to put together, & you can really add anything you like as a topping!
Serves 2
Ingredients:
1 cup mixed frozen berries
1 cup frozen sliced peaches
100g frozen acai
170g greek yogurt
1/4 cup milk
To serve:
sliced banana
2/4 Cup granola
2 TBS nut butter
seasonal fruits, sliced
Method:
Add frozen fruits, yogurt & milk to a large food processor & blend on high. You will need to scrape the bowl down occasionally to ensure everything is mixing well. You may need to add a little more milk to help the fruit blend.
Check for any lumps & once mixture is all smooth, pour out into bowls & top with seasonal fruits & your favourite granola.
