Happy Mother’s Day to all the mums out there! To celebrate, I’m sharing my favourite frozen snack with you all. These yoghurt bites are packed with protein, are super creamy, & have that great sweet & salty balance that we all love. They are so quick & easy to make, & they really hit the spot for those mid afternoon sweet treat cravings.
Makes 6 bites
Ingredients:
1 1/2 cup of your favourite vanilla yogurt
1 cup almond butter
100g dark chocolate
1 Tbs coconut oil
Flakey sea salt (Optional)
Method:
Line a 40cm x 25cm baking tray with baking paper & set aside.
Mix together the almond butter & yoghurt in a medium sized bowl. mix until well combined.
Using a dessert spoon, dollop spoonfulls of the mixture onto the baking tray. Continue until you have six yogurt bites.
Place the tray into the freezer for 1-2 hours, or until completely.
Melt the choclate & coconut oil in a small bowlset over a small pot of simmering water.
Once the chocolate is melted, remove the bites from the freezer, &, working one at a time, dip the bites into the chocolate.
Cover the bites in chocolate, then place back on the baking tray. I find using a fork here to be the best.
Top with flakey sea salt if using. It is best to do this as soon as they come out of the chocolate, as the chocolate sets very quickly.
As mentioned above, the chocolate should set quickly, but if not, pop the bites back into the freezer for 5- 10 minutes.
Place into an air tight container & pop in the freezer to enjoy any time you like!
