Everyone needs a trusty soup recipe to haul out when the weather starts to cool. This soup is filled with warming spices & packed full of wonderful seasonal vegetables.
Serves 6
Ingredients:
1 large brown onion, diced
1 red capsicum, diced
1/2 tbs fresh ginger, crushed
1 ts fresh garlic, crushed
1 tbs turmeric powder
2 large carrots, peeled (if desired) & chopped into 3cm chunks
2 large sweet potatoes, peeled & chopped into 3cm chunks
1 green apple, peeled & chopped into 3cm chunks
3 cups chicken broth
Method:
Add a ts of oil to a large soup pot, set to medium heat.
Once the oil begins to shimmer, add in the onion & capsicum.
Cook until translucent, stirring to prevent buring.
Add in the gralic, ginger & turmeric, cook for 30-40 seconds, stirring constantly.
Add in the chicken broth, stiring to get everything off of the bottom of the pot.
Add in the apple, sweet potatoes & carrots.
Stir, cover with lid & reduce the heat to a low-medium.
Cook for 20-30 minutes, or until everything is tender, stirring occasionally.
Remove pot from heat & add the soup to a blender, blending until you have a smooth consistancy.
Divide evenly amoung bowls, top with sour cream & serve along side your favourite bread.
