Makes 12 Cookies

Ingredients:

125g unsalted butter, softened

1/2 cup white sugar

3/4 cup dark brown sugar

3 large egg yolks, room temperature

155g plain flour

1/2ts baking soda

1/4ts salt

2ts ground cinnamon

100g Dak chocolate

Method:

Preheat oven to 180c.

Line two baking sheets with baking paper.

In a stand mixer with the paddle attachment fitted (or a hand held mixer), cream the butter until it becomes pale.

Add in the sugars & cream together until light & fluffy, scraping the bowl down as you go.

Add in the egg yolks & mix until all the egg is incorperated.

In a seperate bowl, whisk together the flour, baking soda, salt & cinnamon.

Add all the dry ingrients to the wet, mix until just combind.

Add in the dark chocolate & mix gently.

Measure out 2 tablespoons worth of dough, roll into a ball & place on baking sheet.

Bake cookies, 3 cookies to a sheet for 7-10 minutes.

For a softer, chewier cookie, bake for 7-8 minutes. For a crispy cookie, bake for 10 minutes.

Allow to cool & enjoy!
