
Serves 4
Ingredients:
1/2 Cup whole walnuts,
5 Cups mixed salad greens, such as rocket & butter lettuce
2 corella pears
1/4 Cup strong parmesan cheese, thinly shaved
1/4 Cup good quality olive oil
1/4 Cup fresh lemon juice
1/2 Teaspoon fine caster sugar
Salt & pepper to taste
Method:
Preheat oven to 160c.
Spread the walnuts onto a baking tray lined with baking paper.
Bake in oven for 4-6 minutes or until you start to smell the nuts. Stir halfway through baking.
While the walnuts are baking, let’s make the dressing!
To a small container or bowl, add the olive oil, lemon juice & sugar & mix until emulcified. I like to do this in a container & shake until the dressing comes together.
Add in as much salt & pepper as you would like, & set aside until needed.
Remove nuts from the oven & roughly chop.
To assemble the salad:
Arrange the mixed salad greens in a big sald bowl, followed by hald of the walnuts.
Slice the pears in half, then thinly slice so you have lovely crecent shapes.
Arrange the pears however you please, topping with paresan cheese & the rest of the nuts.
Drizzle the dressing over the salad, toss & serve!
