
Serves 5 (x2 slices each)
Ingredients:
10 Slices, 1 inch thick cut bread
4 Large eggs, room tempreature
1/4 Cup milk
300ml Thickened cream
1/2 Teaspoon ground cinnamon
2 + 1/2 Tablespoons vanilla sugar
Butter, for frying
1 + 1/4 Cup vanilla yogurt
3/4 Cup good quality lemon curd
1/4 Cup good quality maple syrup
3 Cups fresh or frozen mixed berries
Method:
Set oven to “keep warm”
In a large bowl, whisk together the eggs, milk, thickened cream, cinnamon & vanilla sugar. Mix well until combined.
Set a large frying pan over a medium heat.
Melt half a teaspoon of butter around in the pan.
Dip the bread, one slice at a time into the batter.
Let excess batter drip back into the bowl, & place the battered bread onto the pan.
Cook for 2-3 minutes per side, until crispy, golden bown & cooked through.
Tranfer to oven to keep warm while cooking remaining bread.
Meanwhile, in a small saucepan, add the berries & cook on a low heat, stiring occasionally.
Once the berries have cooked down into a chunky sauce, add in the maple syrup & cook for a further minute.
Remove from heat, cover, & keep warm until serving.
To assemble, place two slices of french toast on a large plate.
Drizzle over the syrup, & dollop on the yogurt & lemon curd.
Serve immediately & enojy!
