
AS the weather gets warmer, I really start to crave ice cold desserts, but sometimes I find ice cream too heavy. This granita is super cold, lovely & light & so simple to make.
This pineapple & watermelon granita is so full of wonderful fresh summer flavours & has quickly become my husbands favourite spring time dessert!
Makes:
Ingredients:
300g Fresh pineapple, rind removed & cut into cubes
300g Fresh watermelon, seeds & rind removed & cut into cubes
1/2 Cup filtered water
1/3 Cup Fine white sugar
Method:
Place the sugar & water into a small saucepan set to a medium high heat, stirring gently until all the sugar has dissolved. Set aside to cool slightly.
Once cooled slightly, add the syrup, watermelon & pineapple to a blender (add the syrup first as adding liquids in first helps with blending solids).
Blend on high until no lumps remain.
Transfer the mixture to a 1.7 litre baking dish & place, uncovered in the freezer for half an hour – 40 minutes.
Scrape the granita with a fork. For now, only the edges may be starting to freeze.
Repeat every half an hour until all the granita is frozen. Scraping it periodically with a fork gives the lovely fluffy texture that granita is known for.
Spoon into glasses & serve with a sprinkling of fresh mint & enjoy!
Store granita in a container with a lid for up to two weeks. You may need to “refluff” the granita before serving.
