Antipasto Salad

Serves 6:

Ingredients:

6 cups of mixed salad greens

1 medium cucumber

1/2 cup sundried tomatoes, roughly chopped

60 grams mild or spicy salami

150g mediterraneain olives

70g caramelized onion cheddar cheese

50g pecans, roughly chopped

1 Tablespoon each, pumpkin seeds, flax seeds, sunflower seeds

2 tbs dried goji berries

Dressing:

1/3 cup Olive oil

1/3 cup Lemon juice

Salt & pepper, to taste

Method:

To make the dressing, combine all the ingredients in a small jar fitted tightly with a lid & shake until emulsified. Set aside until needed.

For the salad, roughly chop the salami & add to a large salad bowl.

Cube the cheese into 3cm chunks, add to the bowl.

Slice the cucumber into thin rounds, add to the salad.

Add the remaining salad ingredients to the bowl & toss well.

Drissle over the salad dressing, toss, serve & enjoy!
