Serves 4, as an appetizer

345g Kalamata olives, pitted

230g Sicilian olives, pitted

2 Tablespoons good quality olive oil

4 Large Garlic cloves

1/2 Teaspoon pink peppercorns

3 Small red chillis

2 Sprigs of fresh rosemary

1 Medium orange

Method:

Preheat oven to 160c

Drain olives & add to a medium sized, oven safe baking dish.

Roughly chop the chillis & add to the olives.

Using a vegetable peeler, peel 4 large strips of peel from the orange & add to the baking dish.

Peel & crush the garlic cloves. add to the olive mixture.

Using a morter & pestle, lightly crush the peppercorns, add to the olives.

Lastly, add the rosemary, pour over the olive oil & give everything a good mix.

Cook olives in oven for 25-30 minutes until fragrent & warmed through.

Serve on top of crackers & your favourite cheese, or along side some warm crusty bread & fresh burrata cheese.
