Pumpkin Pie Spiced Granola

Makes 4 cups

Ingredients:

2 cups rolled oats

1 1/2 cup total – almonds, pepitas & pecans, whole or roughly chopped, whichever you prefer

1/2 ts salt

1/4 cup melted coconut oil

1/4 cup good quality maple syrup

4 TBS dried goji berries

1 1/2 ts ground cinnamon

1 ts ground ginger

1 1/4 ts ground nutmeg

1/2 ts ground allspice

Method:

Preheat oven to 180c & line a large baking tray with baking paper.

Mix the nuts, berries & oats together in a large bowl. Set aside.

Add all the spices to a small bowl & mix to combine. Add to the dry ingredients & mix well.

Add the coconut oil & maple syrup, mix to combine. Add wet ingredients to the dry ingrdients & mix well.

Transfer the granola to the baking sheet, spread evenly & push mixture down with a wooden spoon. This helps to create big clusters of granola.

Bake in oven for 20-25 minutes or until fragrent & golden & toasty.

Remove from oven & allow to cool to room temperature.

Store in an airtight container for up to one week.
